What is Celiac disease (Wheat Allergy)
Coeliac or Celiac disease or wheat allergy is due to a reaction to
gliadin, a prolamin (gluten protein) present in wheat, and similar
other common grains such as barley and rye. On exposure to
gliadin, and particularly to three peptides present in prolamins,
the enzyme tissue transglutaminase alters the protein, and the body
immune system cross-reacts with the small-intestinal tissue, leads
to an inflammatory reaction. That goes to a truncating of the villi lining
the small intestine (called villous atrophy).
